DIY California and Vegetable Rolls

DIY California and Vegetable Rolls

My kids and I love (cooked) sushi. Although my 14 YO will eat pretty much any kind of sushi, even the raw stuff, I just can’t get over the raw fish factor so I stick to “safe” things like California Rolls, Caterpillar rolls (my favorite), vegetable rolls and anything with tempura. NEWS FLASH…. I like seared tuna! Had the opportunity to taste some at Bonefish Grill and my friends FORCED me to try it. I’m so glad I did! Now back to your regularly scheduled recipe. With a family of seven, we just can’t afford to go out and get sushi as often as we would like. It’s too expensive! A friend suggested since I love to cook, I should start making my own. Truthfully, it never even crossed my mind! So …

Geocaching 101

Geocaching 101

I’m sure you are thinking “what the heck is geocaching?” Well, I always describe it as a modern-day treasure hunt, only the treasure map is your smartphone or GPS and the treasure is a box of dollar store trinkets. There are nearly 6 million geocachers and over 2.6 million active geocaches worldwide—there are probably caches near you right now. What is a cache? Food Advertising by Literally a cache is “a collection of items of the same type stored in a hidden or inaccessible place.” In geocaching, a cache is simply a container that geocachers hide and find using GPS coordinates… caches come in all different shapes and sizes–anywhere from micro-sized, where there is just enough space for a very small log (a piece of paper to sign when you find the cache) to …

The Lazy Mom’s Guide to Party Planning

Although I was supplied products and/or compensated for writing this post, all thoughts and opinions are my own. I only recommend products or services I believe in, and use myself. I have a confession. I hate planning birthday parties. Food Advertising by Coming up with a clever theme, all the researching, organizing, Pinterest-ing and the feelings of inadequacy that brings! Then all the shopping, baking, goody bag making… it’s all too much for a lazy mom like me. I’d rather spend my time with the girls doing fun things like exploring the many Charlotte area festivals and events! Not to mention I’m cheap! I know it’s less work, but I don’t want to spend the money to have a party …

Tasty Tuesday: Three Nights of Easy Family Dinners

Disclosure: I am part of the BJ’s Wholesale Club Blogger Ambassador program. The following is a sponsored post. Although I was supplied products and/or compensated for writing this post, all thoughts and opinions are my own. I only recommend products or services I believe in, and use myself. The past eight weeks or so we have been in a bit of a dinner rut. I’ve been working a lot and attending events, and the kids are prepping for EOGs, finals and summer vacation. I never seem to have enough time to make a proper trip to the store to buy groceries. While I happen to love it, you can only serve breakfast for dinner for so many nights in a row before the kids threaten to call Child Protective Services. Usually to avoid this I’d either run down to …

Tasty Tuesday – Homemade Ice Cream in a Bag

My 15-year old SUV has been in the garage for a week having a new exhaust system installed and getting the A/C repaired (lucky me). Because it was the last week of school I had something going on each day where I needed a car, so I ended up driving my husband to work and picking him up every day. I felt like I’d spent my entire week in the car… Today I told him to just take his car and I’d survive being stuck at home for the day. My kids spent 2/3 of the day watching TV. Finally after listening to 6 hours of Psych in the background I’d had enough! I threw my kids outside and told them to turn on the sprinkler and have fun outdoors …

Simple Balsamic Vinaigrette

Tasty Tuesday – Simple Balsamic Vinaigrette

The other day I made my salad for lunch and I went to grab the bottle of balsamic vinaigrette and it was completely empty! My kids have a terrible habit of putting empty bottles, milk cartons, and butter dishes back into the fridge and then I don’t know until the last minute that I am out of something. Because I didn’t have time to run to the store and I had all the ingredients, I decided to make my own dressing. I’m so sorry that I never tried this before. The dressing was amazing. So much better than anything you could buy in the grocery store. And it only took a few minutes to make! I used a good quality balsamic vinegar and olive oil, this makes all the difference. If …

DisneySide

Hosting a #DisneySide Party for Children of All Ages

Disclosure: My Mommy Brain received free products from Disney and Mom Select to host a #DisneySide @Home Celebration. We also received dried fruit snacks from Brothers-All-Natural and coupons from Crunch Pak for free Foodles. All opinions expressed here are my own. Post contains affiliate links. My girls were thrilled I was selected to host a #DisneySide @Home Celebration! We were especially happy to learn that our theme was “Disney Villains”. Opening the Disney Side box was very exciting for the girls, and for our dog Sparky, too. They couldn’t wait to dig in and see what was provided for the party. Food Advertising by In our box we found all sorts of good things, including invitations, decorations, themed plates, cups, napkins and a tablecloth in the Maleficent color scheme of black, purple, and …

Tasty Tuesday – How to Make The Best Whipped Cream Ever

In our family, one of our favorite treats is freshly made whipped cream on pretty much anything sweet. Cake, fruit, pie, ice cream, pudding, you name a dessert/treat and it tastes better with fresh whipped cream. My kids will eat it plain right out of the bowl. Okay, okay… so will I. A couple of years ago we were living in Williamsburg, VA and had the opportunity to purchase our Thanksgiving dinner from the country club my husband was working for at the time. With his manager’s discount, it was actually cheaper for us to buy the fully-cooked meal than for me to buy the ingredients and then cook it myself. One of the things that was included in the package was a plastic container of what looked like whipping cream, but …

Tasty Tuesday – How To Seed A Pomegranate (without squirting juice all over yourself)

I love the fall. I love the cool, crisp, sweater weather, the stunning leaves, Pumpkin Spice everything (except coffee, I don’t like coffee at all) and pomegranate season! I get so excited the first time I find pomegranates in the grocery store. I miss them after the season is over, so I tend to buy them all. the. time. when they are available. Thankfully our local Aldi has them at a great price, because they are normally between $2-4 a piece. And eating one or two a day could get a little pricey. (And I DON’T share with my girls. I let them have everything else, but the poms are MINE!) Pomegranates can be a bit daunting to seed. They are messy; if you don’t do it correctly you end up …
