Tasty Tuesday – Tangy Apple Slaw

Tasty Tuesday – Tangy Apple Slaw

Here is the amazing Coleslaw recipe I modified for the Food Lion Cook off at the end of August. We didn’t have access to all the ingredients so we had to improvise… using cucumbers in the absence of cabbage and red wine vinegar in place of the apple cider vinegar. It still turned out great.  Wasn’t as colorful as the original recipe, but just as tasty. Things were so crazy at the @official_foodlion #FrugalCookOff I didn’t get to take or share many photos… @melrosefamily, @thebestcrowesnest and I had so much fun and cooked our hearts out, but sadly we lost by 1 point. We served the judges Iowa Tenderloin with apple and carrot slaw and Mexican spiced corn. #latergram #foodie #pork #ad A photo posted by Kate, My Mommy Brain …

Mom Matters: Balancing Work, Family, Life

Disclosure: The following is a sponsored post. Although I was compensated by Charlotte Parent with a payment, product, or something else of value in exchange for writing this post, all thoughts and opinions are my own.  I am thrilled to announce I have been asked to return as a live blogger at the next Charlotte Parent Mom Matters event on Friday, October 16th. And the topic of the event is one that I struggle with every. single. day. Mom Matters: Balancing Work, Family, Life Overwhelmed? Stressed out? Frazzled? Life today is busy! We tell ourselves that if only we could make better use of our downtime or multitask more cleverly, we’d get ahead of the busyness. As we work harder and harder, we invest more hours and energy fighting a losing battle. Something …

Food Lion Frugal Cook-Off

Food Lion Frugal Cook-Off

Disclosure: The following is a sponsored post. Although I was compensated by Food Lion with a payment, product, or something else of value in exchange for writing this post, all thoughts and opinions are my own. Over the years I’ve developed a love for cooking that has branched out from mac & cheese and chicken casserole made with frozen veggies and cream of whatever soup, into new and interesting items that I never would have eaten when I was little… spicy Indian, sushi, Chinese, Latin, Spanish, just to name a few. And my kids LOVE it (usually)! The past week or so it’s been very quiet on my blog because I’ve been frantically practicing for my appearance at the 2015 Food Lion Frugal Cook-off at the Southern Women’s Show in Charlotte (Charlotte Convention Center Hall A – …

Mom Matters: How to Be a Media-Savvy Mom

Disclosure: The following is a sponsored post. Although I was compensated by Charlotte Parent with a payment, product, or something else of value in exchange for writing this post, all thoughts and opinions are my own.  Last Friday Charlotte Parent presented “Mom Matters: How to be a Media-Savvy Mom” featuring two local experts who introduced practical strategies and approaches for parents to make wise choices in the digital age. This informative discussion on kids and technology couldn’t have come at a better time! Melanie Hempe, Founder of Moms Managing Media, discussed “12 Tips for Balancing Technology and Childhood”. Melanie opened her talk with the story of her son’s gaming overuse, the degree it affected her family, and how that experience influenced the way she approached media with her other children. Melanie has a simple three-question assessment that helps parents gain perspective …

Tumblr, Vine, Snapchat, Yik Yak. Everyday there’s some new program or app parents need to figure out. Understanding the programs’ capabilities and giving kids guidance and limits can be difficult. This Charlotte Parent Mom Matters* event will discuss strategies and approaches to help guide parents through this technology maze. At …

What’s in my Geocaching “Go Bag”?

Disclosure: This post may contain affiliate links to products or services I think are worth sharing. By making purchase through these links, I receive a tiny commission which helps to fund my margarita habit (and maybe an occasional date night). Thank you. After many, many geocaching trips, I have made a science of packing the perfect “go bag” (a smallish, drawstring backpack) so that when we get the urge to go geocaching we can just run out the door. Truthfully, the only thing you REALLY need to is a smartphone or a GPS unit and the coordinates to a cache. But I have found the items below that are extremely helpful to have when you go geocaching. Don’t know what geocaching is? Click Here! What’s in my Geocaching “Go Bag”? Hand …

Adults Only! Discovery Place Opens it’s Doors for the Over 21 Set

I work from home AND had five kids at home this past summer break… This combination does not mix well! To keep my sanity I had to discover all the fun places to take the kids. The Discovery Place was a popular destination with my clan. There is so much to do and you can’t possibly see everything in one trip. We have the most fun running around playing with the exhibits. While I love bringing my kids to the Discovery Place, I’ve always secretly wanted to spend time at The Discovery Place without my kids (without ANY kids) so that I could really have some fun and not compete for space with the little ones. But a dream come true would be a night of fun at the Discovery Place with no kids, …

Don’t miss Smithsonian Magazine’s Museum Day Live! Free admission on September 27th at over 1000 Museums

My family and I love to attend local happenings. Events, festivals, parks, museums, aquariums… anything that we can do that is fun, interesting and inexpensive. With a family of 7 we can’t go just anywhere due to admission costs. I have to search out sales, Groupons, free days, etc., so that we can visit places that we normally wouldn’t be able to, like the Sea Life Charlotte/Concord Aquarium. Last year was the first year we participated in the Smithsonian Magazine’s Museum Day Live event. We lived in Huntsville at the time and decided to go to the U.S. Space and Rocket Center and had a blast at a venue that we normally wouldn’t have been able to attend (it’s $20 for those 13 and up and $15 for ages 5-10 so that trip would have cost …
