Don't throw that out! Stem-to-root cooking Featuring The Produce Box

Don’t throw that out! Stem-to-root cooking Featuring The Produce Box

The Produce Box is a wonderful service here in North Carolina that provides you with fresh produce, meats, dairy, and bakery items directly from North Carolina farmers and other small business owners. Each week there is a different selection, depending on what’s available and in season, and unlike a CSA, you choose exactly what, and how much you want to purchase. It’s like a farmer’s market brought right to your door. (Want to become a member? Check it out here!) Because of my Produce Box deliveries, I have become much more aware of the parts of food that we use and the parts that go to waste. Produce Box items arrive to your door a little differently than if you pick them up at the grocery store. For example, carrots …

Carolina Sweet Tart

Carolina Sweet Tart

After we got engaged Colm and I talked a lot about where to get married. We had no family in Connecticut (we didn’t move to North Carolina until much later) and I really didn’t want to go back to Iowa to get married when most of our friends were out East. Colm joked that we should get married in Belfast (Northern Ireland, where he is from). And I said “Yes, we should! That would be amazing!” We arranged a trip to Ireland that February to make plans. Colm told me he knew the perfect place to have our wedding, Belfast Castle. We would be in Belfast on Valentine’s Day so Colm surprised me with reservations at their wonderfully extravagant prix fixe dinner. A friend of Colm’s worked at the castle and arranged for us to have …

The Produce Box is a wonderful service here in North Carolina that provides you with fresh produce, meats, dairy, and bakery items directly from North Carolina farmers and small business owners. Each week there is a different selection, depending on what’s available and in season, and unlike a CSA, you choose exactly what, and how much, you want to purchase. It’s like a farmer’s market brought right to your door. This week my Produce Box delivery contained Cara Cara Red Flesh Navel Oranges (our favorite variety), Mixed-Organic Salad Greens,  Joyce Farms Naked Chicken Breast Tenders, zucchini, yellow squash, vine ripe tomatoes, and avocados. Plus, two small bags of my all time FAVORITE chips, made right here in North Carolina, Carolina Kettle Cozumel Jalapeno Queso Kettle Chips. They are so good I have to lock them away from …

Pomegranate Chicken with Halloumi Cheese, Tomatoes, and Peppers

NOTE: I’m super excited to announce that I was picked the winner of the Sassool Grocery Challenge! Read the official announcement here. A big “Thank you!” to Mounir Saleh and the Sassool team for choosing my dish to be featured in both Sassool locations for the month of January! UPDATE: My dish was so popular Sassool has decided to keep it on the menu! Back in November I was invited to Sassool Mediterranean Cafe in Cary, North Carolina to visit their new grocery and retail section, and pick out a few items using a complimentary $25 gift card. Then using at least three items from the Sassool market, develop a delicious recipe to be entered in the Sassool Grocery Challenge, where I will be competing against eight other Triangle-area bloggers. Mounir Saleh (the …

Southern Comfort Food for the Holidays Featuring The Produce Box

Southern Comfort Food for the Holidays Featuring The Produce Box

My family and I have lived in the South now for nearly six years. We started off moving to Virginia, then Alabama, and finally North Carolina, where we have lived for the past four years. The South is a truly unique place. People have their own way of doing things (if someone is using a turn signal, they are most-likely NOT born in the South), their own way of talking, and their own way of cooking. I’ve run across so many–almost foreign to me–recipes and ingredients native to the South I’ve been a little intimidated to try something new. Especially in the grocery store. I’d hate to buy a giant bag of something, like kale or collard greens, and then have them go to waste because I didn’t know what …

"Go outside and have fun!" Come home when the street lights come on.

Go outside and play!

Do you remember the “good old days” when you were told first thing in the morning to “go outside and play” and you played with your friends until the street lights came on? Go outside, play and have fun with your kids! Before you know it they are going to be grown and living on their own and you won’t have the opportunity any more.
