Apple Muffins with Apple Cider Cream Cheese Glaze

Apple Muffins with Apple Cider Cream Cheese Glaze

I know I am the minority on this one, but pumpkin spice everything is not my favorite thing about fall. Although I do like pumpkin bread and chai tea, my fall obsession is apples. My daughters and I love apples so much we go through about 15 pounds of them every week! We try to make it to the local orchard at least once every fall. The kids love it! We have so much fun riding the hay ride, picking apples, drinking hot apple cider, and of course, eating apple cider doughnuts. We always end up bringing a couple of dozen home with us. I’ve tried to replicate those doughnuts many times without success. The recipes have been okay; I just haven’t found that perfect one yet. On my last attempt, the doughnuts were …

Eggnog Bread with Eggnog Cream Cheese Icing

Eggnog Bread with Eggnog Cream Cheese Icing

I’ve had a love affair with eggnog since I was little. When I was around 7 years old my mom, who was an elementary school librarian, brought home a cookbook with simple recipes that kids could make on their own. One of the recipes was a no-cook eggnog that my brothers and I must have made 1,000 times; it was so yummy. I’ve managed to pass my eggnog obsession on to my girls. Every time they see eggnog in the store they beg me to buy it. With the holidays approaching eggnog is a staple in our house. So when I ran across my friend Jenni Field’s (Pastry Chef Online) recipe for Eggnog Cream Cheese Frosting I knew I needed to find something to spread it on! I was contemplating pound cake when …

Super Easy & Delicious Pumpkin Bread

Tasty Tuesday – Super Easy Pumpkin Bread

My family has become slightly obsessed with pumpkin bread. It calls to me when I walk near a Starbucks, and always seems to find its way into my cart at the grocery store. But purchasing pumpkin bread isn’t cheap when you have five little girls who will eat a whole loaf in one sitting. I discovered a pumpkin bread mix at the grocery store and it was an okay substitute for the store bought bread, not amazing, just okay. Last night I was having a major craving for some pumpkin bread, but the store was closed and I didn’t have a mix on hand so I pulled some things out of the pantry and decided to make my own version of pumpkin bread. Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

It’s really tough to find something that my whole family will eat for breakfast. One hates bacon (if she didn’t look just like me I’d question her parentage), one doesn’t like most cheeses (ditto), one doesn’t like pancakes, several don’t like oatmeal… but they all love this frittata. It took me a little coaxing to get some of the girls to try this, but once they did they were hooked! Any time they see mozzarella and eggs in the fridge they ask me to make a frittata. It’s simple to make and you can easily substitute ingredients to customize it for each person… make it vegetarian, fill it full of meat, add roasted peppers, artichokes, swap out the cheese, anything you want! Tasty Tuesday – Chocolate Banana Breakfast/Snack Cookies

For the most part, my kids are very healthy eaters. Lean meats, whole grains, lots of fruits and veggies, and I limit their sweets. Or so I thought. I recently read an article about how much sugar is in most breakfast cereal and I was shocked! Here I thought I was giving them healthy food for breakfast, when in some cases they were eating the sugar equivalent of Oreo cookies. I wanted to find something that is nutritious, and easy for them to grab for breakfast on their own. They eat enough fruit during the day, and “it’s too hot to have waffles, mom!” So what’s a mom to do? Food Advertising by I kept running across “healthy” breakfast cookie recipes on Pinterest and thought I’d give one a try. …
