Tasty Tuesday – Dole Pineapple Whip

Tasty Tuesday – Dole Pineapple Whip

If you’ve been to Disney World or Disneyland in the last 10 years or so, I’m fairly certain you have heard of a Dole Pineapple Whip… if not, it’s about time you did!! Truthfully, until a friend sent me this recipe from Food.com, I had never heard of a pineapple whip before! I haven’t been to Disney World since before I was married, when my husband Colm (my boyfriend at the time) and two friends met me down in Orlando for a long weekend. And I don’t remember seeing a Dole Pineapple Whip. Of course we spent a lot of time on Pleasure Island partaking in adult beverages so I wasn’t exactly looking for one. When I made the Food.com recipe it was just okay. I knew I could make it better so I, …

Tasty Tuesday – Homemade Ice Cream in a Bag

My 15-year old SUV has been in the garage for a week having a new exhaust system installed and getting the A/C repaired (lucky me). Because it was the last week of school I had something going on each day where I needed a car, so I ended up driving my husband to work and picking him up every day. I felt like I’d spent my entire week in the car… Today I told him to just take his car and I’d survive being stuck at home for the day. My kids spent 2/3 of the day watching TV. Finally after listening to 6 hours of Psych in the background I’d had enough! I threw my kids outside and told them to turn on the sprinkler and have fun outdoors …

Tasty Tuesday - Not So Sweet Tea

Not So Sweet Tea

I love iced tea. When I was little my mom would make iced tea all summer long and I always had to drink from her glass. For some reason it tasted better than the glass of iced tea I poured for myself. (My kids do this to me now and it irritates me to no end. So sorry mom!!) We have been living in North Carolina for just over a year now. I’m very much enjoying the Southern hospitality, mild winters, beautiful fall weather, and early spring gardens. I love nearly everything about the South. Except for the summer heat and–please don’t lynch me–sweet tea. It’s too sweet and there is a bitter aftertaste I just can’t stomach. After trial and error I found a perfect alternative to traditional Southern sweet …

Simple Balsamic Vinaigrette

Simple Balsamic Vinaigrette

The other day I made my salad for lunch and I went to grab the bottle of balsamic vinaigrette and it was completely empty! My kids have a terrible habit of putting empty bottles, milk cartons, and butter dishes back into the fridge and then I don’t know until the last minute that I am out of something. Because I didn’t have time to run to the store and I had all the ingredients, I decided to make my own dressing. I’m so sorry that I never tried this before. The dressing was amazing. So much better than anything you could buy in the grocery store. And it only took a few minutes to make! I used a good quality balsamic vinegar and olive oil, this makes all the difference. If …

Tasty Tuesday: Incredible Inside Out Grilled Cheese

Tasty Tuesday – Incredible Inside Out Grilled Cheese [recipe]

Did you know that April is National Grilled Cheese Month? In honor of this momentous occasion I decided to share my favorite, most unbelievably-good grilled cheese sandwich recipe ever. A grilled cheese sandwich can be as simple or as complicated as you want to make it. I used to make a “normal” grilled cheese… two pieces of bread, some cheese in the middle. Sometimes if I was feeling fancy I’d use goat cheese or brie in place of the american or cheddar jack cheese. Then a few months ago I found a recipe online for inside out grilled cheese, where you add shredded cheese to the outside of your sandwich to create this delicious, crunchy, cheesy crust. OMG my life was changed forever. So amazing. Once I perfected the inside out grilled cheese …
