I’m sorry for being so quiet the past couple of months. Like many people, I’ve been struggling with the current events happening in our world.
On top of everything else, my sweet pup Scout was very sick. On the Monday after Mother’s Day, after fighting hard for two months, Scoutie succumbed to her illness and our family was shattered.
Today would have been Scoutie’s 3rd birthday. I can’t believe she has been gone for almost a month. I still wake up fully expecting to see her sweet face (or more likely her fluffy butt) lying next to me in bed, patiently waiting for me to get up and feed her breakfast.
Out of the many, many pups we have adopted over my nearly 50 years, Scout was one of the most special. She captured my heart—I know some people won’t understand this, but I’d even say she was my soulmate.
Every time I came into the house, whether I was gone for 5 hours or 5 minutes she would come running to the door, doing her bunny hop trot, with a giant smile, her big ears flopping around, and her tail wagging, so happy that I was home. She always knew when I needed some extra love or cuddles, and she never went to bed for the night until I came upstairs, too.
She slept under my desk when I worked, loved to go for rides in my car even if it was just around the corner, and would get so excited when I brought out her harness to go for a walk she would attempt to jump into it while I was still trying to make sure I had it facing the right way.
She especially loved going to Starbucks with me and garnering all the attention she could handle while I worked. Everyone commented on how beautiful she was and asked if it was okay to pet her. I always said how disappointed Scout would be if you DIDN’T pet her.
She was so gentle and kind. Even people who were afraid of dogs were put at ease with Scout.
We had actually talked about getting her trained to become a therapy dog. She would have been perfect.
My heart is both full of love and shattered when I think about Scout. She loved nearly everyone and always brought a smile to anyone she met. I am a better person because of her sweet heart.
So today we are celebrating Scoutie’s wonderful life with one of her favorite treats, Peanut Butter Pupcakes with Banana Frosting.
They are floor-licking good!

These delicious pupcakes are the perfect treat for your dog's birthday or even just to celebrate we all made it through the week. Easy to make and good enough to serve to your human guests (just not as sweet as a normal cupcake).
- 1 cup organic white whole wheat flour or whole wheat flour
- 1/3 cup quick cook oats
- 1 tsp baking soda
- 1/4 cup creamy peanut butter (all-natural, no sugar added is better but not necessary)
- 1/4 cup applesauce, no sugar added
- 1 cup carrots, shredded
- 1 tsp vanilla
- 1/3 cup honey
- 1 large egg
- 8 oz cream cheese
- 2 ripe bananas, mashed
- Preheat oven to 350°F (180°C) and generously grease a 12-count cupcake pan or add cupcake liners.
- In one bowl, mix flour, oats, and baking soda. In separate bowl combine the peanut butter, applesauce, honey, vanilla, and egg.
- Combine wet and dry ingredients, then add carrots and mix well.
- Spoon batter into a cupcake pan and bake for 15-20 minutes until a toothpick inserted into the middle comes out clean (check doneness after 15 mins, as ovens temps vary).
Beat ingredients together until smooth, frost completely cooled pupcakes.
Be sure to refrigerate or freeze leftovers. Leave out on counter to defrost. Frozen pupcakes also make great treats on a hot day!
Important Note: If you use cupcake liners, remember to remove them before getting the pupcakes anywhere near your dogs (if they are anything like mine, they will practically bite your hand off to get to the pupcakes, lol).
Alternate Frosting Suggestions:
Flavor substitutes: replace the banana with : 1/3 cup peanut butter, or 2 tablespoons honey, or 2 tablespoons real maple syrup
