Because my husband had to work on Mother’s Day (he is the Clubhouse Manager at a local country club and Mother’s Day is one of their biggest events of the year) it was up to me to plan something if I wanted to get out of the house. Since moving to the Charlotte area, we haven’t ventured out much aside from a couple of trips to Carowinds and a local spring festival. Tasty Tuesday – Easy and Delicious Ice Cream Cake

Since we are coming up to the official kick-off of summer, I thought I’d share my kids’ all-time favorite dessert. It’s perfect for any upcoming Memorial Day Weekend festivities you might have planned. And the best part is how fast and easy it is to make. You can make it ahead of time or prepare it an hour before you need it, either way pop it in the freezer until you are ready. (If your party is outside and it’s a really hot day, it’s better to make the ice cream cake a few hours ahead of time so it’s good and frozen before you take it outside, otherwise you will have ice cream soup in no time.)
