I can eat soup anytime… it doesn’t matter what the weather is like outside, a piping hot bowl of Progresso® soup always hits the spot for me. It is a staple in my pantry; I stock up on all the amazing Progresso® Light varieties especially when they are on sale at Walmart. It’s a quick and easy meal that’s filling but low in calories. Perfect on those busy days when I don’t have a lot of time to make lunch.
One day I had a major craving for my tortilla soup but I didn’t have all the ingredients on hand. I looked around my pantry to see what I could make and a light bulb went off. I could use the Progresso® Light Chicken & Cheese Enchilada flavor soup to create a version of my tortilla soup.
I played around with the seasoning and ingredients until I came up with something that everyone loved. It turned out more like a stew, thick and hearty, but it only has 307 calories per serving!
My girls love to use it as a dip with tortilla chips. It also makes a great filling for burritos, and is delicious over rice. So versatile, super quick to put together and easy to make. My kids request it all. the. time! I actually make a double batch to be sure I have enough for everyone.
You won’t believe how easy it is to prepare! I used bagged, cooked grilled chicken, pre-shredded cheese, boxed chicken stock and canned, chopped green chili peppers to make this recipe quick and easy. In just 5 minutes I have it in the oven so I can get back to whatever task I was working on before I realized it was nearly dinner time.

Quick Prep Cheesy Chicken Sopa
Ingredients
- 1 can Progresso® Light Chicken & Cheese Enchilada flavor soup
- 16 oz no added salt chicken stock
- 1/2 cup chopped green chiles
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked hot paprika
- 1/4 teaspoon chili powder
- 1/4 teaspoon Cayenne pepper
- 4 cups chopped cooked chicken
- 6 soft corn tortillas (6 inch), torn/cut into bite-size pieces
- 1 1/2 cup shredded Mexican blend cheese, divided
- avocado, sliced - for garnish (optional)
- tortilla chips - for garnish (optional)
Instructions
- In a mixing bowl combine the Progresso® Light Chicken & Cheese Enchilada flavor soup, stock, chiles, spices, chicken, and 3/4 cup of the cheese.
- Add tortilla pieces. Mix well.
- Spoon mixture evenly into greased, oven-proof individual baking dishes.
- Cover, and bake at 375 degrees for 30 mins or until bubbly.
- Uncover, sprinkle tops with the remaining cheese.
- Bake an additional 15 mins or until golden brown.
- Garnish with sliced avocado and a tortilla chip.
- Enjoy!

One of my favorite things about Progresso® soup, besides the fact they are delicious, is they help my kids contribute hundreds of BoxTops to their schools. Every year our elementary school has a contest to see who can bring in the most BoxTops (divided by grade) and every year one of my girls wins. It’s amazing how quickly those little BoxTops add up to contribute lots of money to your local school. So be sure to collect them before you recycle your cans! If you don’t have kids in school you can still collect BoxTops and just drop them off at your nearest school. I know they will appreciate it!
