School Lunches Made Easy

School Lunches Made Easy

The one thing I dread every school year, aside from the early mornings, is back-to-school lunch battles. Don’t laugh, the struggle is REAL!! My kids refused to eat school lunches (unless it was pizza day). So every day I would pack five lunches. Trying to remember which kid liked peanut butter and jelly this week, or which kid would only eat veggies if they were drenched in balsamic vinegar. Food Advertising by After having one too many uneaten lunches return home, I announced to my kids that I was DONE. If they didn’t want hot lunch, they were responsible for making their own lunches from now on. This system has been working out for the past two years, and now the only complaints I get is when we run out of …

Quick & Delicious Hot Sandwiches Even Your Kids Can Make

Quick and Delicious Hot Sandwiches Even Your Kids Can Make

“Mom! What’s for dinner?” “I’m working. Make a sandwich.” “Not sandwiches again!!” “It’s that or go hungry.” “UGH!!!!” Food Advertising by The past two months I have been working as much as I possibly can because my husband lost his job and bills don’t stop just because your income does. On top of all the extra work, my 16 year old is in duel enrollment (taking both high school and college courses) so I have to drive her to the college every Tuesday and Thursday night. Because I’m not available as much as usual, my girls have had to become a lot more self-sufficient. The bulk of our groceries this month have been cold cuts and bread. The girls have been eating so many cold sandwiches in fact, that when I brought home $5 Fav …

Perfect on those busy days when I don’t have a lot of time to make lunch. Food Advertising by One day I had a major craving for my tortilla soup but I didn’t have all the ingredients on hand. I looked around my pantry to see what I could make and a light bulb …

Cheese! Glorious Cheese! #NationalCheeseLoversDay!

I. Love. Cheese. God help me if I ever become lactose intolerant because I cannot go a day without cheese. Food Advertising by This is my most favorite comfort food ever!! Here is a quick and easy recipe that my kids ask for at least once a week. This dish is so easy even your husband can make it! Tasty Tuesday: Incredible Inside Out Grilled Cheese

Tasty Tuesday – Incredible Inside Out Grilled Cheese [recipe]

Did you know that April is National Grilled Cheese Month? In honor of this momentous occasion I decided to share my favorite, most unbelievably-good grilled cheese sandwich recipe ever. A grilled cheese sandwich can be as simple or as complicated as you want to make it. I used to make a “normal” grilled cheese… two pieces of bread, some cheese in the middle. Sometimes if I was feeling fancy I’d use goat cheese or brie in place of the american or cheddar jack cheese. Then a few months ago I found a recipe online for inside out grilled cheese, where you add shredded cheese to the outside of your sandwich to create this delicious, crunchy, cheesy crust. OMG my life was changed forever. So amazing. Food Advertising by Once I perfected the inside …

Tasty Tuesday – Copycat Nan and Byron’s Train Wreck Fries

On Friday, I attended my monthly Moms’ Night Out Charlotte blogger meet and greet. This time it was at the ah-maz-ing Nan and Byron’s restaurant in Charlotte. I had such a wonderful evening visiting with friends, sampling the menu, and savoring a couple of their specialty libations. The Cadillac Jalapeno Margarita (Patron, Citrus Juices, muddled fresh jalapeno, topped with Grand Marnier-flavored Cadillac Foam and cayenne pepper) and the Farmhouse Lemonade (Bacardi Limon, Strawberry Vodka, Limoncello, citrus juices, muddled fresh strawberries and lemon) were two favorites. I REALLY wanted to try the G’Night Moon (Junior Johnson’s Midnight Moon Moonshine, soda water, Sprite, muddled mint and lime with a house made simple syrup) but I had to drive home later that night and knew if I had one more drink I’d be pushing …
