Apple Muffins with Apple Cider Cream Cheese Glaze

Apple Muffins with Apple Cider Cream Cheese Glaze

I know I am the minority on this one, but pumpkin spice everything is not my favorite thing about fall. Although I do like pumpkin bread and chai tea, my fall obsession is apples. My daughters and I love apples so much we go through about 15 pounds of them every week! We try to make it to the local orchard at least once every fall. The kids love it! We have so much fun riding the hay ride, picking apples, drinking hot apple cider, and of course, eating apple cider doughnuts. We always end up bringing a couple of dozen home with us. I’ve tried to replicate those doughnuts many times without success. The recipes have been okay; I just haven’t found that perfect one yet. On my last attempt, the doughnuts were …

How About Them Apples [Caramel Apple Sangria recipe]

How About Them Apples [Caramel Apple Sangria recipe]

One of my favorite things in the fall, aside from colorful leaves and cooler weather, is all the fresh, yummy apples! And with October designated as National Apple Month it’s the perfect time to take a bite out of all the yummy varieties available! My all-time favorite apple is the honeycrisp. It’s delicious, sweet and crisp with a firm flesh, making it an ideal apple to eat raw, and perfect for a yummy sangria. Some juicy apple facts… The apple is a “pome”. A fruit that is created from the fusion of outer flower parts and ovaries. Apple trees take from 2 to 10 years to produce their first fruit. It depends on the apple variety, and whether they are dwarf or full-sized trees. Sunny days and cool nights along with the rich soil help …

Homemade Caterpillar Rolls, North Carolina Style

Homemade Caterpillar Rolls, North Carolina Style

Disclosure: “Homemade Caterpillar Rolls, North Carolina Style”  is sponsored in partnership with the North Carolina Department of Agriculture & Consumer Services (NCDA&CS) but all opinions are my own.  I love sushi (so do three of my five daughters). To clarify, when I say sushi, for everyone except my adventurous 16 yo, I mean the “safe” rolls, specifically anything that doesn’t have raw fish in it. The closest to raw I will get is seared tuna. The thing is, sushi isn’t cheap (and if it is, be afraid, be very afraid). Last week I took my girls to a local restaurant that serves half-price sushi at lunch, our bill for 5 people was STILL $70 (not including tip) shh… don’t tell my husband. Since I had such good luck making California Rolls and Vegetable Rolls a while back, I …

Lazy Baker Cheddar and Bacon Potato Biscuit Bread

Lazy Baker Cheddar and Bacon Potato Biscuit Bread

I love biscuits. What’s not to love about a biscuit? All that flaky-tender goodness in a little round package! But I’m a lazy baker. I really don’t like to turn out dough or cut out biscuits, and I HATE to clean up the counters after making any kind of rolled out dough. It’s such a mess! One day when I was craving some biscuits I decided to try a “lazy baker” method and just put the finished dough in a baking pan. I was really happy with how they turned out. The first time I made Cheddar and Bacon Potato Biscuit Bread they came out a bit salty. So I played around with the recipe until I found the perfect combination of dough, cheddar, and bacon to create a moist “biscuit” bread. It has …

Quick & Delicious Hot Sandwiches Even Your Kids Can Make

Quick and Delicious Hot Sandwiches Even Your Kids Can Make

“Mom! What’s for dinner?” “I’m working. Make a sandwich.” “Not sandwiches again!!” “It’s that or go hungry.” “UGH!!!!” The past two months I have been working as much as I possibly can because my husband lost his job and bills don’t stop just because your income does. On top of all the extra work, my 16 year old is in duel enrollment (taking both high school and college courses) so I have to drive her to the college every Tuesday and Thursday night. Because I’m not available as much as usual, my girls have had to become a lot more self-sufficient. The bulk of our groceries this month have been cold cuts and bread. The girls have been eating so many cold sandwiches in fact, that when I brought home $5 Fav pizzas from Papa …
