Copycat Chick-fil-A Grilled Market Salad Featuring The Produce Box

Copycat Chick-fil-A Market Salad Featuring The Produce Box

The Produce Box is a wonderful service here in North Carolina that provides you with fresh produce, meats, dairy, and bakery items directly from North Carolina farmers and other small business owners. Each week there is a different selection, depending on what’s available and in season, and unlike a CSA (Community-supported agriculture), you choose exactly what, and how much you want to purchase. It’s like a farmer’s market brought right to your door. (Want to become a member? Check it out here!) If you ask me what’s my favorite salad the answer will always be the Chick-fil-A Market Salad. It’s sooo good. The flavor combinations are bright and delicious, and honestly, I could eat one for breakfast, lunch, and dinner every day and not get tired of it! But it …

Shrimp Tacos with Creamy Jalapeno Sauce

Tasty Tuesday – Shrimp Tacos with Creamy Jalapeno Sauce

One of the first blogger meet and greets I attended was held at Chuy’s with a group of Charlotte area bloggers. We had the most fun tasting food and drinks, not to mention chatting and laughing all night. The minute I read the description for the Baja Shrimp Tacos I knew I had to order them. “Baja Tacos – Freshly made flour tortillas with your choice of lightly battered and fried fish or shrimp, cilantro, red cabbage and Creamy Jalapeno sauce”. So simple, yet it appealed to me right away. My mouth watered when the plate was delivered. They looked so yummy!   And they didn’t disappoint! The tacos were excellent. I wanted to go back for lunch the next day, and the day after that and the day after that! …

Peppermint Hot Chocolate Whoopie Pies

Peppermint Hot Chocolate Whoopie Pies

The birth of Holiday Baking day and how Peppermint Hot Chocolate Whoopie Pies came to be. Over the past five years, due to my husband’s job, we have moved four times and lived in four different states. Four years ago my girls had a particularly hard time over winter break. We hadn’t lived in Alabama very long. There were no visits from family, no friends to have over for hot chocolate, no holiday parties to attend, no secret Santa exchanges… all of the fun things that most people participate in during winter break. My husband was out of work and we didn’t have the extra money for the girls to buy gifts for each other, something they looked forward to every year. After thinking about what we could do that would be fun AND allow …

One Pot Linguine alla Caprese

One-Pot Linguine alla Caprese

A few weeks ago I received a free trial of one of those food delivery services. I was excited to see bruschetta on the menu. I made the appetizer-sized portions thinking the kids would never dare try them and the hubby and I would have a nice little treat all to ourselves. But sadly that was not meant to be. Turns out my kids LOVE bruschetta. They ate every last bite, aside from the little taste I had while I was seasoning the dish with salt and pepper. The girls had asked me a few times to pick up the ingredients so they could make bruschetta again. So when I saw some particularly yummy-looking artisan tomatoes on sale last week, I picked up a several pints, along with some fresh French bread. Got home from the store, dropped …

Super Easy & Delicious Pumpkin Bread

Tasty Tuesday – Super Easy Pumpkin Bread

My family has become slightly obsessed with pumpkin bread. It calls to me when I walk near a Starbucks, and always seems to find its way into my cart at the grocery store. But purchasing pumpkin bread isn’t cheap when you have five little girls who will eat a whole loaf in one sitting. I discovered a pumpkin bread mix at the grocery store and it was an okay substitute for the store bought bread, not amazing, just okay. Last night I was having a major craving for some pumpkin bread, but the store was closed and I didn’t have a mix on hand so I pulled some things out of the pantry and decided to make my own version of pumpkin bread. I have to say it turned out …

Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

It’s really tough to find something that my whole family will eat for breakfast. One hates bacon (if she didn’t look just like me I’d question her parentage), one doesn’t like most cheeses (ditto), one doesn’t like pancakes, several don’t like oatmeal… but they all love this frittata. It took me a little coaxing to get some of the girls to try this, but once they did they were hooked! Any time they see mozzarella and eggs in the fridge they ask me to make a frittata. It’s simple to make and you can easily substitute ingredients to customize it for each person… make it vegetarian, fill it full of meat, add roasted peppers, artichokes, swap out the cheese, anything you want! In case you aren’t familiar with what a …
