Peppermint Hot Chocolate Whoopie Pies

Peppermint Hot Chocolate Whoopie Pies

The birth of Holiday Baking day and how Peppermint Hot Chocolate Whoopie Pies came to be. Over the past five years, due to my husband’s job, we have moved four times and lived in four different states. Four years ago my girls had a particularly hard time over winter break. We hadn’t lived in Alabama very long. There were no visits from family, no friends to have over for hot chocolate, no holiday parties to attend, no secret Santa exchanges… all of the fun things that most people participate in during winter break. My husband was out of work and we didn’t have the extra money for the girls to buy gifts for each other, something they looked forward to every year. Copy Cat Chick-fil-A Garden Market Salad

Copycat Chick-fil-A Grilled Market Salad

My favorite salad is a Chick-fil-A Grilled Market Salad. It’s sooo good. The flavors are so yummy together and honestly I could eat one for breakfast, lunch, and dinner every day and not get tired of it! But I always crave it on Sunday when Chick-fil-A is closed! So now I just make my own (if I can keep berries in the house, my kids can eat them by the pound faster than locusts!) Food Advertising by You just have to try it!! Now I tweaked the Chick-fil-A recipe a little bit towards my personal tastes. I don’t like blue cheese so I used goat cheese crumbles, and I like a lot of flavors and textures in my salad so I added some dried cherries. Their tartness goes really well with the sweet …

Super Easy & Delicious Pumpkin Bread

Tasty Tuesday – Super Easy Pumpkin Bread

My family has become slightly obsessed with pumpkin bread. It calls to me when I walk near a Starbucks, and always seems to find its way into my cart at the grocery store. But purchasing pumpkin bread isn’t cheap when you have five little girls who will eat a whole loaf in one sitting. I discovered a pumpkin bread mix at the grocery store and it was an okay substitute for the store bought bread, not amazing, just okay. Last night I was having a major craving for some pumpkin bread, but the store was closed and I didn’t have a mix on hand so I pulled some things out of the pantry and decided to make my own version of pumpkin bread. Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

Tasty Tuesday – Fresh Mozzarella and Sausage Frittata

It’s really tough to find something that my whole family will eat for breakfast. One hates bacon (if she didn’t look just like me I’d question her parentage), one doesn’t like most cheeses (ditto), one doesn’t like pancakes, several don’t like oatmeal… but they all love this frittata. It took me a little coaxing to get some of the girls to try this, but once they did they were hooked! Any time they see mozzarella and eggs in the fridge they ask me to make a frittata. It’s simple to make and you can easily substitute ingredients to customize it for each person… make it vegetarian, fill it full of meat, add roasted peppers, artichokes, swap out the cheese, anything you want! Simple Guacamole & Baked Tortilla Chips

Tasty Tuesday – Simple Guacamole & Baked Tortilla Chips

Chips and guacamole. It’s the one snack that ALL my girls love to eat. One of my favorite guacamole recipes is from Alton Brown, but I don’t always have the extra time to make it, so I discovered an easy and delicious way to make guacamole in a very short amount of time. It’s so easy, in fact, that my kids can make it on their own! It takes less than 5 minutes to make and it’s just as tasty as the “real” stuff. Dinner in a Snap - Shrimp Tacos

Dinner in a Snap – Shrimp Tacos

Are you on SnapChat? I’ve been a holdout for a long time because… 1) I just didn’t “get it” and, 2) I was afraid I’d be bombarded with inappropriate snaps, lol. But after a fellow blogger gave me a few awesome tips on how to use SnapChat, I’ve become a little obsessed. More so watching other people’s snaps, but I’m getting better about posting. If you are interested in following me I’m @mym0mmybrain (the o is a zero). Anyhow… this whole discussion is coming about because I’m super excited about my new series called “Dinner in a Snap”! I will be posting quick dinner entrees via SnapChat. Hope you hop on over there and follow me (from your smart phone)… if SnapChat isn’t your thing, no worries! I will be posting …

DIY California and Vegetable Rolls

DIY California and Vegetable Rolls

My kids and I love (cooked) sushi. Although my 14 YO will eat pretty much any kind of sushi, even the raw stuff, I just can’t get over the raw fish factor so I stick to “safe” things like California Rolls, Caterpillar rolls (my favorite), vegetable rolls and anything with tempura. NEWS FLASH…. I like seared tuna! Had the opportunity to taste some at Bonefish Grill and my friends FORCED me to try it. I’m so glad I did! Now back to your regularly scheduled recipe. With a family of seven, we just can’t afford to go out and get sushi as often as we would like. It’s too expensive! A friend suggested since I love to cook, I should start making my own. Truthfully, it never even crossed my mind! So …

Tasty Tuesday: Three Nights of Easy Family Dinners With PERDUE® HARVESTLAND® fresh organic whole chicken

Tasty Tuesday: Three Nights of Easy Family Dinners

Disclosure: I am part of the BJ’s Wholesale Club Blogger Ambassador program. The following is a sponsored post. Although I was supplied products and/or compensated for writing this post, all thoughts and opinions are my own. I only recommend products or services I believe in, and use myself. The past eight weeks or so we have been in a bit of a dinner rut. I’ve been working a lot and attending events, and the kids are prepping for EOGs, finals and summer vacation. I never seem to have enough time to make a proper trip to the store to buy groceries. While I happen to love it, you can only serve breakfast for dinner for so many nights in a row before the kids threaten to call Child Protective Services. Usually to avoid this I’d either run down to …

Tasty Tuesday – Homemade Ice Cream in a Bag

My 15-year old SUV has been in the garage for a week having a new exhaust system installed and getting the A/C repaired (lucky me). Because it was the last week of school I had something going on each day where I needed a car, so I ended up driving my husband to work and picking him up every day. I felt like I’d spent my entire week in the car… Today I told him to just take his car and I’d survive being stuck at home for the day. My kids spent 2/3 of the day watching TV. Finally after listening to 6 hours of Psych in the background I’d had enough! I threw my kids outside and told them to turn on the sprinkler and have fun outdoors …

Simple Balsamic Vinaigrette

Tasty Tuesday – Simple Balsamic Vinaigrette

The other day I made my salad for lunch and I went to grab the bottle of balsamic vinaigrette and it was completely empty! My kids have a terrible habit of putting empty bottles, milk cartons, and butter dishes back into the fridge and then I don’t know until the last minute that I am out of something. Because I didn’t have time to run to the store and I had all the ingredients, I decided to make my own dressing. I’m so sorry that I never tried this before. The dressing was amazing. So much better than anything you could buy in the grocery store. And it only took a few minutes to make! I used a good quality balsamic vinegar and olive oil, this makes all the difference. If …
