Since we are coming up to the official kick-off of summer, I thought I’d share my kids’ all-time favorite dessert.
It’s perfect for any upcoming Memorial Day Weekend festivities you might have planned. And the best part is how fast and easy it is to make. You can make it ahead of time or prepare it an hour before you need it, either way pop it in the freezer until you are ready. (If your party is outside and it’s a really hot day, it’s better to make the ice cream cake a few hours ahead of time so it’s good and frozen before you take it outside, otherwise you will have ice cream soup in no time.) In our experience the cake was gone way before it had time to melt.
Like most families, our summer is filled with activities, work, fun. To top it off we have five birthdays and my wedding anniversary all within a 4-week period. Last year was hard because my husband was out of work and we didn’t have a lot of money to throw birthday parties for everyone. So we improvised and had one big party for the kids.
My daughters don’t agree on much, but they all wanted an ice cream cake (which is a great idea for a hot Alabama summer). About 3 hours before the party I ran out to pick one up. How hard could it be? There are tons of stores in our area, and I’ve seen ice cream cakes in the freezer section nearly every time I’ve gone shopping. Well, I went to five different stores and not one had ice cream cake in stock. I started to panic a little, and didn’t want to spend $20 on a bakery cake when the girls had their hearts set on ice cream cake, so I decided to make one on my own.
Because I didn’t have a lot of time, I knew I couldn’t do it the traditional way of melting the ice cream to spreading consistency, putting it a cake pan, re-freezing it, etc. So I looked around to see what I could use. I decided on a box of ice cream sandwiches, some bakery pound cake, Cool Whip and whipped chocolate frosting.
To say it was a hit is a major understatement. The cake was devoured in record time and the girls now request this cake for every birthday. Even my kid who doesn’t like chocolate (I know, crazy right?!? If she didn’t look just like me I’d swear she was switched at birth) loved it.

Oh, my. That DOES look like a yummy thing. Maybe it'll be what I'll bring for the family reunion this summer… particularly since it's the kind of thing that I can make at a campsite. 🙂
